Slow-Roasted New York Roast

Ingredients

+ Add to Shopping List
  • 3 tablespoons your favorite steak rub
  • 6 tablespoons olive oil
  • 1 (3-pound) beef New York roast

Directions

Combine rub and olive oil to form a paste. Rub thoroughly into meat.
Preheat oven to 450°F.

Place roast on a rack in a shallow baking dish. Roast for 15 minutes. Decrease temperature to 250°F and roast for about 1 hour, or until a thermometer inserted into thickest part reads 135°F (medium rare).

Remove roast from oven and let rest for 15-20 minutes. Carve into thin slices.
