Semolina Pasta Dough

  • 1 1/4 cups semolina flour
  • 3/4 cup 00 Flour or AP Flour
  • 1 teaspoon sea salt
  • 3/4 cup warm water


Combine both types of flour and salt in a large bowl. Pour flour mixture onto a wood cutting board or other flat surface. Make a well in the middle of the flour and slowly pour in the warm water.

Slowly and gently scoop some of the flour toward the middle of the well, combining it with the water.

Continue to do so until the middle part has formed a paste-like consistency.

Combine with the rest of the flour and knead until it is very smooth, about 10 minutes.

Form it into a ball and place in a bowl. Cover the bowl with plastic wrap and let it rest at room temperature at least half an hour before using.
