Roasted Brussels Sprouts with Bacon and Lemon

  • 1 pound Brussels sprouts, trimmed and halved lengthwise
  • 6 slices bacon, chopped
  • 1/2 lemon, thinly sliced
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper to taste


Preheat oven to 450°F.
Toss sprouts with bacon, lemon and oil. Season with salt and pepper.
Spread in a single layer in a shallow roasting pan.
Cook for about 20 minutes or until sprouts are crisp-tender, stirring occasionally.
