Roasted New Potatoes with Lavender and Mint

Ingredients

  • 2 pounds small new potatoes, quartered, not peeled
  • 1 teaspoon kosher salt
  • 2 teaspoons dried lavender buds
  • 1/4 cup olive oil
  • 2 teaspoons minced fresh garlic
  • 2 tablespoons chopped fresh mint

Directions

Preheat oven to 400°F.

In a large bowl, toss the potatoes with the salt, lavender, olive oil and garlic. Place mixture in a large, shallow roasting pan. Roast for 20-25 minutes or until potatoes are tender and lightly browned. Top with fresh mint and serve.

Makes a great side dish for grilled or roasted chicken, pork or grilled salmon.
