Roast Beef (Dry Roasting Technique)

Ingredients

  • 1 beef top round or rump roast, 2-3 pounds
  • 1 clove garlic, thinly sliced
  • 1/3 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Directions

Preheat oven to 325°F.
Cut 1-inch deep slits in roast. Stuff slits with garlic so no garlic is showing.
Combine oil and seasonings to form a paste. Using all of seasoning mixture, completely coat roast.
Roast until internal temperature reaches 135°F for rare, 145°F for medium. Do not overcook.
Let rest for 5-10 minutes to redistribute juices.
