- 1 avocado, peeled and seeded
- 1 cup low-sodium vegetable stock
- 1 green onion
- 1/2 bell pepper, any color
- 1 cucumber, seeded
- 2 cups baby spinach
- 1 clove garlic
- 1 1/4 inch slice ginger, or to taste
- 1 tablespoon liquid aminos, or to taste
- Juice of 1 lemon or lime
- 1/2 teaspoon ground coriander
Puree all ingredients in a food processor.
Season to taste.
