- 4 cups quinoa crispies
- 1/2 cup dried cranberries
- 1/2 cup dried blueberries
- 2/3 cup sweetened coconut flakes
- 1/3 cup mini chocolate chips
- 1 teaspoon salt
- 1 cup peanut butter
- 1 cup brown rice syrup
Line an 8-inch x 8-inch baking dish with parchment paper. Mix all ingredients except peanut butter and brown rice syrup together in a bowl and set aside.
Warm the brown rice syrup in a saucepan over medium heat, stirring frequently, until bubbling (or heat in microwave-safe dish for one minute). Remove from heat and add peanut butter and stir.
Add peanut butter mixture to dry ingredients and mix until well blended. Press into dish and chill until firm. Serve chilled or at room temperature.
