- 2 medium russet potatoes, peeled and cubed
- 3 Yukon Gold potatoes, peeled and shredded
- 1 onion, finely minced
- 2 tablespoon butter
- 2 eggs
- 3-4 tablespoons matzo meal
- 1 teaspoon kosher salt
- Vegetable oil
Bring a pot of salted water to boil, add the russets and cook until firm and tender (about 12-15 minutes). Drain, cool and mash.
Melt butter in a small frying pan and lightly brown the onions.
In a medium bowl, mix shredded potatoes, mashed potatoes, browned onions, eggs, matzo meal and salt. Mix well. Mixture should hold together but not be sticky. Add more matzo meal if necessary.
In a large skillet over medium heat, add enough oil to cover the bottom of the skillet. Drop potato mixture into the skillet and flatten. Cook on both sides until golden.
