  • 4 tablespoons seasonings of your choice
  • 2 tablespoons olive oil
  • 1 boneless pork loin, about 2 pounds

Mix together rub and oil.
Cut pork almost in half lengthwise, starting at one side, and spread meat open like a book.
Spread half of seasoning mixture on open side of roast. Bring sides together and tie with butcher's string. Rub outside of roast with remaining seasoning mixture.
Heat grill to high, then reduce to medium-high. Turn off one burner and place meat on that side (indirect method). Grill temperature should be 350°F.
Grill until internal temperature reaches 155°F, about 45 minutes.
Let rest for 5 minutes and slice into thin crosswise slices.
