Poached Prawns for Cocktails

Ingredients

  • 3 quarts water
  • 1/2 lemon
  • 1 teaspoon black peppercorns
  • 1 bay leaf
  • 1 teaspoon salt
  • 1 pound peeled and deveined large prawns

Directions

Bring water, lemon, peppercorns, bay leaf and salt to a boil in a large pot. Reduce heat and simmer 10 minutes. Add shrimp and boil about 2-3 minutes or until shrimp are pink and just cooked through.
Drain in a colander. Spread in shallow dish and place in the freezer for 10-15 minutes, or until chilled. Refrigerate until ready to enjoy.
Can be prepared one day ahead.
