- 1 large untreated cedar or alder plank
- 1 large or 2 small sides salmon (about 2-3 pounds), skin on
- Olive oil
- Salt and freshly ground black pepper
Soak plank in water for at least 30 minutes or up to 2 hours. Brush salmon with olive oil and season well with salt and pepper. Heat grill to medium-high. Place plank on grill and cover for about 5 minutes, or until plank starts to smoke. Carefully transfer salmon onto plank, skin side down, and close grill. Reduce heat to medium, or push coals to edges of grill, keeping plank in center. Close grill and cook until just cooked through (15-25 minutes, depending on size of salmon). Remove from grill and serve immediately.
To make it your own, try topping the salmon with any of the following before grilling: Lemon slices and fresh dill, your favorite salmon rub, garlic butter or a light sprinkling of brown sugar. Note: Alternately, you can cook in a 325°F oven. Soak the plank as above and place it on a baking sheet. Preheat the plank for 5 minutes before baking the salmon.
