Petra's Sesame-Crusted Tuna on Green Tea Soba Noodles

  • 4 6-ounce tuna fillets (albacore or ahi)
  • Salt and pepper
  • 2 tablespoons white sesame seeds
  • 2 tablespoons black sesame seeds
  • 2 tablespoons olive oil
  • 1 pound green tea soba noodles
  • 1/2 cup soy sauce
  • 2 tablespoons fresh lime juice
  • 2 cloves garlic, finely chopped
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon olive oil
  • 2 teaspoons sesame oil
  • 1/4 cup cilantro, coarsely chopped
  • 3 scallions, finely chopped


Season both sides of tuna with salt and pepper. Mix sesame seeds together in a bowl, then dredge each side of tuna in seeds.
In a large skillet over medium-high heat, heat oil until almost smoking. Sear tuna on each side and cook to desired doneness.
Cook noodles according to package directions. Place in a large bowl.
Whisk together soy sauce, lime juice, garlic, ginger, olive oil and sesame oil. Pour over noodles, then add the cilantro and toss to combine, seasoning with salt and pepper as needed. Garnish with scallions.
