  • 1/4 pound crumbled blue cheese, divided
  • 1/2 cup mayonnaise
  • 1 1/2 teaspoons Dijon mustard
  • 4 cloves roasted garlic
  • 12 slices coppa salami
  • 1 1/2 pounds ground beef
  • 1/3 cup minced yellow onion
  • 1/2 teaspoon mild chile powder
  • Salt and freshly ground black pepper
  • 4 toasted burger buns


Combine half of blue cheese, mayonnaise, Dijon and garlic in a food processor.
Pulse until well combined.
Refrigerate until ready to use.
Meanwhile, preheat broiler to high.
Spread salami in a single layer on a baking sheet.
Broil for 2-3 minutes, or until crisp.
Cool on a paper towel-lined plate, then crumble.
Combine with beef, onions and chile powder.
Season with salt and pepper and form into 4 patties.
Grill or broil to desired doneness.
Serve hot on toasted buns, topped with blue cheese mayonnaise.
