Pasta with Garlic and Anchovy

  • 8 ounces pasta
  • 2-3 garlic cloves, minced
  • 1-2 teaspoons anchovy paste
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Crushed red pepper flakes (optional)
  • Parmesan cheese (optional)


Prepare pasta according to package directions, reserving 1/4 cup cooking water.
Meanwhile, over low heat, combine garlic, anchovy paste and olive oil in a pan large enough to accommodate cooked pasta.
When garlic is tender, add cooked pasta and toss to combine.
Add a little of pasta water (1-2 tablespoons at a time) and heat through.
Add salt and pepper to taste and optional ingredients, if using.
