- 4 (8 ounces) halibut, rock fish, ling cod or true cod, skinned
- 1 1/4 cups panko (Japanese bread crumbs)
- 3/4 cup shredded Parmesan cheese
- 2 teaspoons parsley flakes
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup mayonnaise
Preheat oven to 350°F.
In a medium bowl, mix together the panko, Parmesan cheese, parsley flakes, salt and pepper.
Coat the fillets in mayonnaise and roll in panko mixture. Place on a baking sheet and bake 20-25 minutes or until golden brown on the outside.
