Overnight Pickled Shrimp Appetizer

Ingredients

  • 2 pounds peeled, deveined and cooked medium shrimp
  • 1/2 large red onion, thinly sliced
  • 1/2 fennel bulb, cored and thinly sliced (including green parts)
  • 1 carrot, thinly sliced on diagonal
  • 1 stalk celery, with leaves, thinly sliced on diagonal
  • 1/2 cup extra-virgin olive oil
  • 7 garlic cloves, halved
  • 1 lemon, halved and thinly sliced
  • 8 bay leaves
  • 1 teaspoon celery seeds
  • 1 teaspoon mustard seeds
  • 1 teaspoon coriander seeds
  • 6 dried hot chili peppers
  • 1/2 teaspoon white pepper
  • 1/2 cup distilled white vinegar
  • 1/3 cup freshly squeezed lemon juice
  • 2 teaspoon kosher salt

Directions

Combine all ingredients in a large bowl and toss well.
Cover and refrigerate for 6 hours or overnight.
Serve as an appetizer with toothpicks, or serve with a salad for a meal.
