Oven-Fried Chicken with Panko and Parmesan

  • 8 boneless, skinless chicken thighs
  • 6 tablespoons melted unsalted butter
  • 2 teaspoons minced garlic
  • 3 tablespoons minced parsley
  • 1 1/2 cups panko bread crumbs
  • 1 teaspoon paprika
  • 1/2 cup shredded Parmesan cheese
  • Salt and freshly ground black pepper to taste


Heat oven to 400°F.
Wash chicken and pat dry.
Sprinkle with salt and pepper.
In a small bowl, combine butter, garlic and parsley.
On a plate, combine panko, Parmesan and paprika.
Brush chicken with butter and coat with panko mixture.
Place on a greased baking sheet.
Bake for 30-35 minutes, or until juices run clear when chicken is pierced.
