Oven-Baked Chicken Parmesan

  • 1 1/4 -1 1/2 pounds boneless, skinless chicken breasts
  • 1/2 cup mayonnaise
  • 1/4 cup Dijon mustard
  • 1 1/2 cups seasoned breadcrumbs (or plain mixed with 1 tablespoon Italian seasoning)
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1/2-3/4 cup shredded mozzarella cheese


Preheat oven to 450°F.
Cut chicken into 6-8 pieces and pound to 1/4-inch thickness.
Stir together mayonnaise and mustard.
In a shallow bowl or pie plate, stir together breadcrumbs and Parmesan.
Line a baking sheet with parchment paper or foil sprayed with non-stick cooking spray.
Coat each piece of chicken in mayonnaise mixture, wiping of excess, then coat in breadcrumbs, pressing gently to adhere.
Place breaded chicken on prepared baking sheet.
Bake for 10-15 minutes, or until just cooked through.
Remove chicken from oven and heat broiler to high.
Top each piece of chicken with marinara sauce and sprinkle with mozzarella.
Broil for 1-2 minutes, just to melt cheese.
Serve hot.
