Old-Fashioned Brittle

  • 2 cups granulated sugar
  • 1/2 cup water
  • Pinch of salt
  • 2 tablespoons butter
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon baking soda
  • 1 1/2-2 cups nuts or seeds


Spray a sheet pan with non-stick cooking spray and set aside.

In a medium saucepan combine sugar, water and salt; bring to a boil. Reduce heat and simmer until mixture is amber in color. Carefully add butter, extract and baking soda and stir quickly to combine. Immediately add nuts, stir to coat and carefully pour onto the prepared baking sheet.

Cool completely; then break into pieces. Coat brittle lightly with powdered sugar to keep pieces from sticking and store in an airtight container for up to one week.


Alternate mix-in options: Chopped candy, caramel corn, bacon (cooked crispy and crumbled), chocolate, pretzel bits, cookie chunk, dried fruit, cacao nibs, crystallized ginger or sesame seeds. 

Alternate flavoring options: Cayenne, chipotle powder, rosemary, thyme, Chinese five-spice powder, black pepper, espresso or tea leaves.
