- 1 - 1 1/2 pounds cod fillets, skinned and boned
- 1/3 cup sugar
- 1/4 cup salt
- 1/4 cup vinegar
- 4 tablespoons butter, melted
- 1 lemon
- Paprika and lemon pepper
- Lemon wedges for garnish
Heat broiler to high.
lace fillets in a high-sided sauté pan or Dutch oven and cover with water by an inch. Add sugar, salt and vinegar. Bring to a simmer.
s soon as fish is slightly cooked, remove from pan and transfer to a broiler-safe baking dish. Brush fish with a bit of the melted butter and season lightly with paprika and lemon pepper. Place fish under broiler and broil until fish is just cooked through.
erve with lemon wedges and melted butter.
