Ingredients

  • 1 teaspoon sesame oil
  • 1 teaspoon peanut oil
  • 1/4 cup diced shallots
  • 1 clove garlic, minced
  • 8 cups water
  • 1 tablespoon bonito fish soup stock
  • 4 tablespoons white miso paste
  • 3 scallions, thinly sliced
  • 2 teaspoons chili garlic sauce
  • 3/4 pound cod
  • 3/4 pound shrimp (21/25 count)
  • 3/4 pound bay scallops

Directions

In a 6-quart saucepan, heat both oils over medium-high heat. Add shallots and cook until just softened.
Add water, bonito and miso paste, and cook 4 minutes to dissolve.
Add scallions, chili sauce and cod and cook 3 minutes.
Add shrimp and cook 3 more minutes.
Add scallops and cook about 3 minutes more, or until all seafood is cooked through.
