Lemon Freekeh Pilaf

  • 1 cup freekeh* (available in our Bulk Foods)
  • 2 cups chicken broth or water
  • 2 tablespoons unsalted butter
  • Juice of 1 lemon
  • 1/2 teaspoon lemon zest
  • 1/2 cup toasted, slivered almonds
  • Kosher salt and fresh cracked pepper to taste


Rinse freekeh in cold water. Bring broth or water to a boil in a sauce pan. Add freekeh and butter. Stir, reduce heat and simmer for about 30 minutes or until liquid is absorbed and freekeh is tender. Add lemon juice, zest salt, pepper, and toasted almonds.
This makes a quick easy side dish to pair with almost anything.
For a twist, add your favorite fresh or dried herbs or spices. Add chopped spinach, arugula or dried fruit. Or cool it and toss with your favorite dressing. Add cooked shrimp or chicken to make it a meal.

* Freekeh is a cereal food made from roasted green wheat.
