Lemon Berry Yogurt Parfait

  • 1/4 cup sugar
  • Zest of 1 large lemon
  • 1 pound ripe berries (sliced strawberries, blueberries, raspberries, blackberries)
  • 3-4 cups vanilla yogurt
  • 1 1/2 cups granola (more or less to taste)


Stir together sugar and lemon zest, mashing against side of bowl with back of a spoon. (Alternately, combine in a mini chopper and pulse a few times.)
Sprinkle lemon sugar over fruit and toss to combine. Let sit for 10-20 minutes at room temperature.
In 4 tall glasses, layer yogurt, berries and granola.
Serve immediately.

For a light dessert, gently stir together 2 cups yogurt with 1 cup sweetened whipped cream and substitute crumbled vanilla cookies for granola!
