  • 1 (1 1/2-1 3/4 pound) pork tenderloin
  • 1 1/2-2 cups prepared stuffing
  • Olive oil
  • Salt and freshly ground pepper
  • Kitchen twine


Preheat oven to 475°F.
Butterfly pork tenderloin lengthwise, or have our Meat Market butterfly it for you. To roll the tenderloin pinwheel-style, pound with a meat mallet to about 1/2-inch thick (optional).
If stuffing is cold, heat in microwave until steaming.* Spread stuffing over pork tenderloin and roll closed. Tie tenderloin with kitchen twine. Rub with oil and season with salt and pepper.
Place stuffed tenderloin on a rack and set on a cookie sheet or roasting pan. Bake for 20-30 minutes, or until internal temperature of meat and stuffing reaches 145°F.

* Using warm stuffing ensures that the stuffing will reach a safe temperature before the pork overcooks.
