Bouquet garni is a bundle of fresh herbs on the stem, tied together with string.
It usually is used to flavor stock, broth or soup and is removed before serving.
There are many variations, but most include parsley, thyme and bay. Sage and rosemary also can be included. Some recipes call for the bouquet to include celery stalks or leek leaves.
To make a bouquet garni, simply bundle the herbs together and tie tightly with kitchen twine.
For the same effect with dried herbs, bundle the herbs in a square of cheesecloth and tie the top together with twine.
