How to Cook Beef Tenderloin (Searing Technique)

  • 2 pounds (approximately) beef tenderloin
  • 2 tablespoons dry seasonings of your choice
  • 1/4 cup olive oil


Preheat oven to 400°F.
Mix together seasonings and olive oil to make a paste. Rub over all surfaces of meat.
Heat a heavy, ovenproof pan over medium-high heat.
When pan is smoking hot, add meat and sear on all sides until very browned, about 5 minutes.
Transfer to oven and cook until internal temperature reaches 135°F for rare, 140°-145°F for medium-rare, about 10-15 minutes.
Let rest for 5-10 minutes before carving.
