  • 1/4 cup olive oil or melted butter
  • 3 cloves garlic, minced
  • 2 tablespoons minced fresh herbs, or 1 tablespoon dried
  • 1/4 cup freshly grated Parmesan cheese
  • 4 cups cubed day-old bread
  • Salt and freshly ground black pepper


Preheat oven to 300°F.
In a small pan, warm oil or butter over low heat.
Stir in garlic and herbs.
Remove from heat and let sit for 10 minutes.
In a large bowl, toss together oil (or butter), Parmesan and cubed bread until bread is evenly coated.
Season to taste with salt and pepper.
Spread croutons in a single layer on a baking sheet, using two sheets if necessary.
Bake for 30-40 minutes, stirring occasionally, until toasted through.
Store in an airtight container at room temperature for up to two weeks.
