- 2 cups dried navy beans
- 1/2 pound thick bacon, cubed
- 1 onion, chopped
- 2/3 cup molasses
- 1 tablespoon dry mustard
- 1/2 cup packed brown sugar
- 1 teaspoon freshly ground pepper
- Salt to taste
Soak beans in cold water, in their baking pot, overnight. The next day, preheat oven to 325°F. Simmer the beans in the baking pot, in the same water, until beans are tender, approximately one hour. Drain. Remove beans and reserve cooking liquid.
In the same pot, cook the bacon until lightly browned. Add onions and cook until translucent. Reduce heat and add molasses, dry mustard, brown sugar, pepper and cooked beans. Add reserved cooking liquid to cover beans. Put lid on and bake in 325°F oven for three hours or until tender.
Remove beans from oven, uncover and test for seasoning. Add more water or salt as necessary. Return to oven with lid off until sauce has thickened to desired consistency.
Delicious with barbecue, potato salad and corn bread.
