- 4 (6-8 ounces) fillets of tuna, marlin or any firm white-fleshed fish
- 1/3 cup orange juice
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1 tablespoon fresh ginger, minced
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon salt
Whisk together the marinade ingredients in a small bowl. Place the fish in a pan, pour marinade over and marinate 30 minutes.
Heat grill to medium high. Place fish on grill for four minutes. Turn and brush with marinade. Grill four to five minutes longer or until desired doneness.
Alternately, you can cook on the stove top by adding about three tablespoons vegetable oil to a large skillet and cook fish over medium-high heat for four minutes. Brush with marinade and cook until desired doneness, about four to five minutes.
