Grilled Caesar Salad

  • 2 romaine hearts, split lengthwise
  • Olive oil
  • Salt and freshly ground black pepper
  • Your favorite Caesar dressing
  • 1 cup of your favorite croutons
  • 1 large lemon, quartered


Brush romaine hearts with olive oil and season lightly with salt and pepper.

Heat grill to high and brush with oil. Place romaine on grill, cut side down, and grill for about two minutes or just until lettuce is nicely marked. Remove to a plate.

To serve family style, chop lettuce crosswise into thick chunks and toss with Caesar dressing. For individual salads, place one lettuce wedge on each plate and drizzle dressing over top. Serve topped with croutons and with lemon wedges on the side.

This salad is great with grilled chicken or salmon.  For Caesar purists, top with a few anchovy fillets!
