Garlic Chicken Soup for Wellness

  • 4 cups chicken broth
  • 1 head garlic, peeled
  • 1 medium onion, quartered
  • 1 1/2 tablespoons each minced parsley and cilantro
  • 1 teaspoon each minced mint and basil
  • 1 teaspoon curry powder
  • 1/4 teaspoon red pepper flakes
  • Salt to taste
  • 1 tablespoon fresh lemon juice


Place all ingredients in a saucepan and bring to a boil.
Reduce heat and cover. Simmer for 30 minutes, or until vegetables are very tender.
Pour through a strainer and return broth to pan.
Add garlic, onions and herbs to a food processor or blender and puree.
Add to broth and stir to combine.
