Fruit Salad with Sweet Farro and Walnuts

  • 1/2 cup farro
  • 1 1/2 cups water
  • 1/2 cup apple juice
  • 1 tablespoon honey
  • 1/2 cup walnut pieces
  • 2 cups diced peaches, nectarines and/or plums (or whatever is in season)
  • 2 cups fresh berries (slice strawberries)


Combine farro, water, apple juice and honey in a small saucepan.
Bring to a boil.
Reduce heat and simmer, stirring occasionally, until farro is tender and liquid is absorbed, about 40 minutes.
Stir in walnuts, then cool to room temperature.
(Can be prepared one day ahead; refrigerate until ready to use.)
Toss farro mixture with fruit and serve.

Enjoy topped with a dollop of vanilla or lemon yogurt, or for a more decadent treat, top with whipped cream or vanilla ice cream.
