Fruit and Nut Granola

  • 4 cup old-fashioned rolled oats
  • 2 cups sweetened coconut
  • 2 cups sliced almonds
  • 1/4 cup oat bran
  • 2 tablespoons wheat germ
  • 2 teaspoons cinnamon
  • 1/3 cup honey
  • 1/4 cup brown sugar
  • 1/3 cup canola oil
  • 1 cup chopped dried apricots
  • 1 cup dried cranberries
  • 1 cup golden raisins


Preheat oven to 350°F.
In a large bowl, mix together oats, coconut, almonds, oat bran, wheat germ and cinnamon.
In a small, microwave-safe bowl, mix together honey and brown sugar.
Microwave for about 1 1/2 minutes, stirring every 30 seconds, or until sugar is dissolved.
Stir in oil, then pour over oat mixture and stir to combine and coat.
Pour on one or two baking sheets and bake for 45 minutes, stirring every 15 minutes.
Remove from oven and continue to stir every 15 minutes until cool.
Stir in remaining ingredients and store in an airtight container or a zip-top bag.

This is wonderful as a low-fat, high-fiber addition to yogurt, or just with milk as your breakfast cereal.
