- 1 cup sliced mushrooms
- 1 tablespoon olive or canola oil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 12 ounces high-quality cream of mushroom soup
- 1 cup milk
- 1 tablespoon soy sauce
- 1 pound fresh green beans cut into 2- 3-inch pieces
- 4-ounces fried crispy onions, divided
Preheat oven to 350°F.
Heat a medium skillet on medium high and add olive oil. Add the mushrooms and season with salt and pepper. Sauté mushrooms until nicely browned.
Mix together the mushrooms, soup, milk, soy sauce, beans and half of the fried onions in a large bowl. Place mixture in a 1 1/2 quart buttered casserole dish. Bake, covered, for 45 minutes or until beans are done to your liking.
Sprinkle with remaining onions and bake, uncovered, 5 minutes more.
