- 4 cups cooked and cooled farro
- 1 cup seasonal berries (blueberries, raspberries, blackberries, sliced strawberries)
- 1 cup diced apple
- 1 cup sliced grapes
- 1 cup diced celery
- 1 cup crumbled feta cheese
- 1/2 cup chopped walnuts
- 1/4 cup diced red onion
- 3 tablespoons minced Italian parsley
- 1/3-1/2 cup prepared Balsamic or raspberry vinaigrette
Gently toss all ingredients together in a bowl and chill until ready to serve.
Delicious on its own or served over greens.
