Curried Cauliflower

Ingredients

  • 1 tablespoon olive oil
  • 1 cup thinly sliced onion
  • 1 tablespoon finely chopped ginger
  • 2 tablespoons curry powder
  • 1 tablespoon minced garlic
  • 5 cups cauliflower florets
  • 1 cup chopped tomato
  • 1 cup plain yogurt
  • 1/2 cup chopped cilantro
  • 1/2 teaspoon salt

Directions

Heat oil in a large saucepan over medium-high heat.
Add onion and ginger and sauté for 3 minutes.
Reduce heat to medium and add remaining ingredients.
Bring to a boil, then cover pan and reduce heat and simmer until cauliflower is tender, about 15 minutes.
