- 2 tablespoons taco seasoning (available in Bulk Foods) or 1 packet taco seasoning
- 1 cup low-sodium chicken broth
- 1 1/2 pounds boneless, skinless chicken breasts (or breasts and thighs)
Turn on crockpot to high heat.
Add taco seasoning and chicken broth and stir to dissolve.
Cover, reduce heat to low and cook for 6-8 hours.
Using two forks, shred cooked chicken, in its juices, to desired consistency.
This recipe freezes very well, and the meat can be used for tacos, sandwiches, soups, chili and burritos or even chicken salad.
