  • 2 tablespoons bacon grease, pan drippings, or vegetable oil
  • 2 tablespoons flour
  • 1 3/4 cups whole milk (or more to taste)
  • Salt and freshly ground black pepper


Heat fat in a frying pan over medium-high heat. Add flour and stir constantly until the flour just starts to turn golden and smells lightly toasted. Reduce heat to low and whisk in milk, stirring constantly. Stir until gravy thickens. If you like thinner gravy, add a little more milk. Season to taste with salt and pepper. Serve over fried chicken, chicken-fried steak, mashed potatoes or biscuits.

For Sausage Gravy: Brown 1/2 pound breakfast sausage in frying pan. If necessary, add a little oil so you have about 2 tablespoons of fat. Add flour and proceed as above.
