  • 1 tablespoon olive oil
  • 1 large onion
  • 1/2 cup chopped red bell pepper
  • 4 garlic cloves, chopped
  • 6 skinless, boneless chicken thighs, cut into bite-sized pieces
  • 1 tablespoon curry powder
  • 1 tablespoon minced ginger
  • 1/4 teaspoon crushed red pepper flakes
  • 4 cups chicken broth
  • 2 cups canned, diced peeled tomatoes
  • 1 large Granny Smith apple, coarsely chopped
  • 1/2 cup white long-grain rice
  • 2 tablespoons dried currants


Heat oil in a large pot over medium-high heat.
Add onion and sauté until tender.
Add bell pepper and garlic and sauté for 1 minute.
Add chicken, curry, ginger and red pepper. Sauté until chicken is almost done and curry and ginger are fragrant, about 5 minutes.
Add broth, tomatoes, apple and rice and simmer for 20 minutes or until rice is tender.
Stir in currants and serve.
