Corona Bean Salad with Basil and Rosemary

  • 1 pound giant Corona beans, soaked overnight
  • 1/2 cup olive oil, or to taste
  • 1 sweet onion, chopped
  • 2 cloves garlic, chopped
  • 2 cups chopped fresh tomato (or 1 can diced fire-roasted tomatoes, with juice)
  • 1 tablespoon chopped fresh basil
  • 2 tablespoons chopped fresh rosemary
  • Salt and freshly ground pepper to taste


Rinse beans and place in a large pot.
Cover with cold water.
Bring to a boil and then reduce heat and simmer for 1 hour or until tender.
Drain, rinse and cool.
In a large bowl place beans, onions, garlic, tomato, basil and rosemary.
Toss gently and season to taste with salt and pepper.
