- 1/4 cup balsamic vinegar
- 2 teaspoons chopped fresh oregano or 1/2 teaspoon dried
- 3/4 cup good-quality olive oil
- 1/2 cup roasted green chilies
- 4 green onions, finely chopped
- 4 cups halved cherry tomatoes
- Kosher salt and freshly ground black pepper to taste
Whisk vinegar and oregano together in a bowl.
Slowly whisk in olive oil.
Mix in green chilies and onions.
Chill for at least 2 hours.
Stir in tomatoes and adjust seasoning as needed.
Serve over steak or chicken.
