- 6 slices thick-cut bacon, finely diced
- 1/2 cup grated Cheddar cheese
- 1 pound ground beef
- Salt and freshly ground black pepper
- Burger buns and your favorite toppings
Cook bacon until crisp. Using a slotted spoon, remove to a paper towel-lined plate and cool to room temperature. In a mixing bowl, combine bacon and beef (for an even more decadent burger, mix in some of bacon drippings). Season with salt and pepper. Using clean hands, mix until combined. Don?t over-mix or burgers will be tough. Form into 4 very thin patties. Divide cheese evenly and spread in center of patties. Fold over and seal. Reshape to form 4 round burgers. Grill over medium-high heat until cooked through, 6-8 minutes per side. Serve on toasted buns with your favorite toppings.
