Local Shellfish Bring
the Bold, Briny & Blue
Since my wife convinced me to move to her childhood stomping grounds in the Puget Sound, I’ve always wanted to make the trip north to Penn Cove Mussel Fest in Coupeville, Wash. I’m told it’s well worth the 25-minute ferry ride to Whidbey Island to taste the local flavor of the “Bold, Briny and Blue!” Every year at the beginning of March, they have fresh mussel tasting, cooking demonstrations, fishing, shanty song sing-a-longs and so much more. Sounds like a hoot! Unfortunately, being a relatively new father, I just haven’t found the time to make the trip north. But …

Help Yourself to
Tasty Oils & Vinegars
When it comes to creating your own palette of flavor in the kitchen, we often head to our carefully curated spice rack as the source of inspiration (or, in my case, a dusty cabinet full of disorganized spice bottles and random plastic baggies full of who-knows-what). But too often I overlook my oil and vinegar selections’ ability to impact a dish. Is there anything so simple and delicious as a few healthy splashes of extra-virgin olive oil, balsamic vinegar, sea salt and fresh ground peppercorn on a bright green salad? If the hints of spring coming around the corner have you …

Cajun Takes the Cake
in Ode to Mardi Gras
Mardi Gras is a wonderful time to get inspired and sample some decadent foods that we don’t often see in the Pacific Northwest. French for “Fat Tuesday,” the carnival culminates on Feb. 25 this year, the day before Ash Wednesday, which is the beginning of the fasting season of Lent. Parades and parties (and food!) take center stage until lent, which ends April 11. These traditions are observed by many religions. New Orleans, with its strong Catholic roots, amazing music and food, is the de facto epicenter of Mardi Gras. We’re Baking King Cakes for Mardi Gras But …

Citrus and Chocolate
Brighten the Season
I’m originally from a mountain valley college town in Montana, but my wife and 2-year-old son were both born in Seattle. The very first time I thought of my child as a “Seattle kid” occurred last weekend when, after opening the drapes to let in a brief dose of sunshine, my toddler instinctively whipped his hand up to cover his eyes and said “Owie, that’s bright!” like some sort of tiny vampire. …

Kick Off the Big Game
with Big, Super Flavors
Last year, more than 100 million people fired up their big screens, tablets and even their phones to watch the “Big Game” (the real name is copyrighted by the NFL and they don’t mess around). So we know that many of you will be doing the same thing this weekend. Of course, the real football fans are actually paying attention to the game – the rest of us came primarily to enjoy decadent game-day food, talk about how good (or how bad?) the halftime show is, and maybe enjoy a few laughs from a clever commercial or two. …

We’re Out to Demystify
the Wonders of Miso
When someone says “miso,” many of us immediately think of miso soup. We might envision a steaming cup of miso soup served to us as an appetizer at our favorite sushi restaurant. But as our Asian Foods Manager Mitsuko Blanda told me recently: “Miso is about so much more than soup.” Indeed, this nutty, salty paste can add flavorful umami and a pleasing texture to so many of your busy weeknight meals. “It’s very, very basic to Japanese food culture and it’s now starting to be acknowledged and appreciated beyond the Japanese culture as well,” Mitsuko said. Going Beyond Meat
and Under the Sea
Plant-based eating has been around forever, but it’s gaining increasing attention from the American food culture mainstream. Hence the meteoric rise of products like Beyond Meat with its 100% plant-based, non-GMO, protein-rich ingredients. Beyond Meat products are renowned for their uncanny ability to mirror the flavor and texture of real ground beef, patties and sausages while offering the same amount of protein as real beef and pork — but with about one-third the fat (that caught my attention!). Beyond Meat and other alternative meat companies have even found their …
