- 2 boneless, skinless chicken breasts, sliced in half horizontally
- Salt and freshly ground pepper
- 1 large tomato, diced
- 12 fresh basil leaves
- 2 large fresh mozzarella balls, thinly sliced
- Olive oil
Heat oven to 400°. Lightly oil a 9x13-inch baking dish.
Place chicken on cutting board and pound to 1/2-inch thickness; season with salt and freshly ground pepper. Top each piece with sliced mozzarella, diced tomatoes and fresh basil leaves. Gently roll up chicken and place in baking dish.
Drizzle chicken with olive oil and season with more salt and freshly ground pepper. Bake 12-15 minutes or until chicken reaches an internal temperature of 165°F.
