  • 3 large eggs, beaten
  • 1 cup sugar
  • 1 cup brown sugar, loosely packed
  • 1 cup butter, melted
  • 2 teaspoons vanilla extract
  • 3 tablespoons instant espresso or instant coffee
  • 1 1/4 cups cocoa powder, sifted
  • 1/2 cup flour
  • 1/2 teaspoon salt
  • 1 cup mini chocolate chips


Preheat oven to 350°F.
Butter and flour an 8-inch square brownie pan.
Whisk together eggs, sugars, butter, vanilla and espresso until well combined.
In a separate bowl, whisk together cocoa powder, flour and salt.
Pour wet ingredients into flour mixture and mix with a rubber spatula until just combined. Do not over-mix.
Fold in chocolate chips.
Transfer batter to pan and spread evenly.
Bake for 40-45 minutes, or until a toothpick inserted in center comes out with a few crumbs, but not wet.
Cool for at least 20 minutes before cutting into squares.

To make these brownies even more decadent, serve topped with whipped cream and a chocolate covered coffee bean!
