Butter and Paprika-Basted Chicken Thighs

  • 4 chicken thighs, bone in and skin on
  • 4 tablespoons unsalted butter, divided
  • 4 tablespoons olive oil, divided
  • 1 tablespoon hot or sweet smoked paprika
  • 2 cloves garlic, minced
  • 1 teaspoon kosher salt


Preheat oven to 375°F.
Melt 2 tablespoons butter and 2 tablespoons olive oil an ovenproof skillet over medium-high heat.
Add chicken skin side down and cook until crisp and golden brown.
Meanwhile, in microwave, melt remaining butter with remaining oil, paprika, garlic and salt.
Flip chicken and pour melted butter mixture over top, turning to coat.
Bake browned side up for about 30 minutes, or until internal temperature reaches 165°F.
Baste chicken every 10 minutes.
