Brown Rice with Edamame and Orange

  • 1cup raw brown rice, prepared according to package directions (or 2 cups leftover cooked brown rice)
  • 1 tablespoon vegetable oil
  • 1 1/2 cups thinly sliced celery
  • 1 cup sliced green onions
  • 1 cup 1/2-inch pieces green pepper
  • 1 package (10 ounces) frozen shelled edamame, thawed
  • 1/2 cup coarsely chopped dry roasted cashews
  • 1/2 cup teriyaki sauce of your choice
  • 1 teaspoon sesame oil
  • 1 teaspoon freshly ground black pepper
  • 2 small oranges peeled, sectioned and chopped 


Cook rice. Heat oil in large nonstick skillet over medium-high heat. Add celery, onion and green pepper and sauté one minute. Stir in the cooked rice, edamame, cashews, teriyaki sauce, sesame oil, pepper and oranges and serve
