  • 2 pounds broccoli, stems peeled
  • 3/4 cup milk or cream
  • 1/4 cup olive oil
  • 1 1/4 teaspoons kosher salt
  • 3/4 teaspoon black pepper
  • 1/2 cup crumbled feta cheese


Pour 1 inch of water in a large saucepan.
Place broccoli in pan, sprinkle lightly with kosher salt, cover tightly and bring to a boil.
When broccoli is tender, remove from heat and pour out any excess water.
Place broccoli in bowl of a large food processor.
Add all other ingredients and puree until nearly smooth, or to desired consistency.
Serve as-is for an elegant side dish to nearly any meal, or pour into an 8-inch square baking dish or small casserole dish, top with additional feta cheese and bake at 350°F for 35 minutes until lightly browned.
