- 2 red beets, steamed and diced
- 2 cups vanilla almond milk
- 2 cups sliced strawberries
- 1 orange, juiced
Scrub beets clean, leaving root end intact and removing all but one inch of stalk. This will help minimize color bleeding. Reserve beet greens for another use.
Place steamer basket in pot and steam until beets are tender, approximately 30-40 minutes.
When done, plunge beets into cold water.
When cool, peel the beets (the peel should easily release).
Combine all ingredients in blender and puree until well combined.
For an added protein boost, add Greek yogurt, protein powder or chia seeds.
