- 3 tablespoons smoked, hot or sweet paprika
- 3 tablespoons brown or white sugar
- 3 tablespoons kosher salt
- 1 1/2 tablespoons black pepper
- 1/2 tablespoon garlic or onion powder (or replace salt with onion or garlic salt)
- 1 tablespoon mild chile powder
- 2 teaspoons white pepper
- 2 teaspoons cayenne
- 1 tablespoon dry herbs (thyme, oregano, basil, sage)
- 1 teaspoon allspice
- 2 teaspoons cocoa powder
- 1 tablespoon tea leaves or instant coffee
- 1 tablespoon onion or garlic flakes
